We can program at the system level using cocoatouch and native libraries such as Quartz and Opengl. We can also create more cross device applications by using cross device frameworks like phonegap and javascript web apps.
For 2d and 3d games we again have a variety of techniques and engines to choose from based on the visual and gameplay requirements of the game.
